Bob’s Spaghetti sauce (Pizza)

Bob’s Spaghetti sauce (aka(Freckles1880)
Low sodium and low calorie

2 14 oz cans of diced tomatoes with no salt added.
1/3 cup virgin olive oil
1/3 cup chopped onion
1 Teaspoon garlic
Pinch of red hot pepper flakes
Ground Pepper to taste
2 bay leaves
1 12 oz can of no salt added tomato paste
1 teaspoon vanilla
1 Tablespoon brown sugar
1 Tablespoon basil leaves
1 Tablespoon Oregano
1 Tablespoon of Italian Spice

Place the chopped onions in a saucepan and cook with a tablespoon of olive oil. Cook until onion is translucent, about 5 minutes.

Place all ingredients, except the bay leaves, into a regular blender and blend until smooth. Place the mixture in a saucepan. Add bay leaves. Cook until boiling then simmer mixture about 10-15 minutes while stirring regularly. Garnish with Chives and serve. For a lumpier sauce I don’t blend 1 can of tomatoes.
Remove Bay leaves before serving.
Yields about 5 cups. Total salt added was 140 mg from the tomatoes, and 150 from the tomato paste. 290 mg total divided by 5 cups is about 58 mg per cup. Serving size is about ½ cup.

Optional: 1 cup of low sodium chicken broth adds 70 mg sodium (14 mg per cup)

Also may be used on a homemade, no salt added pizza.
